This is a classic twist on the basic grilled chicken. You can use boneless, skinless chicken breasts or also bone in, skin-on breasts. They are delicious either way! My husband is actually sort of partial to the bone in, skin-on option. He says they have more flavor. I think he just likes getting messy and eating like a cave man. You can go full Martha Stewart on this recipe and make your own bbq sauce if you would like. Or you can just take the easy way out like I do and use your favorite delicious store bought version.
When I pick a bbq sauce, I try to make sure first that it’s all natural and doesn’t have preservatives, artificial food colors or flavors. I like sauces that are made with real ingredients, dammit! Stubb’s brand is a good one and it comes in tons of flavors.
So let’s get back to the chicken.
For either type of chicken breast, preheat your oven to 375.
If you have a pan that you can grill on the stovetop and is also safe to use in the oven, get that baby out. If not, no worries. Just get out an extra baking dish, such as a 8×11 rectangle glass dish, you’ll just have to dirty one more dish.
Using Boneless, Skinless Chicken Breasts
Wait til oven is fully preheated to 375. Then preheat your large skillet or grilling pan on medium-high heat. Sprinkle sea salt, garlic powder, and pepper on both sides of 3 boneless, skinless chicken breasts. Douse your pan with a quick splash of olive oil and toss in a tiny patty of butter. If the butter sizzles slightly, but doesn’t burn, you’re ready.
